2 boneless, skinless chicken breasts (about 1 lb)

Heat a skillet over medium-high heat and cook the chicken breasts for 6–8 minutes per side, or until fully cooked. Let them rest for a few minutes before slicing into strips.

In a large bowl, combine the salad greens, cherry tomatoes, cucumber, red onion, and Kalamata olives. Add the sliced chicken and crumbled feta cheese.
